water’s chemistry
The water molecule’s formation enthalpy, which is 242 kJ · mol-1 (0.1 MPa; 298.15 K), is high. Consequently, water is extremely stable. This stability, associated with its electrical properties, its high polarity (µ = 1.84 D) and high dielectric constant (ε = 78.5 F · sr · m-1), makes it particularly suitable for placing numerous substances in a solution. Most mineral substances can be dissolved in water, as can a large number of gases and organic products.
