measuring fats and oils

Reading time:

A number of methods have been put forward to measure hydrocarbons, fats and oils that are often present as emulsions or in a saponified form.

Fats and oils are separated by filtration after acidification and the addition of a sodium chloride solution. The deposit collected is extracted using Soxhlet (solvent to be selected, Freon, hexane, trichloroethylene, chloroform…). A final gravimetric measurement is undertaken after the solvent has been distilled.

We can use the NF T 90.114 standard, however the latter is mainly appropriate for soluble hydrocarbons present in small quantities.
